Manual Grease traps work by slowing the flow of waste water, this allows it to cool and separate into layers with the FOGS (Fats, Oils & Grease) sitting on top and water at the bottom. The outlet is designed to only allow the liquids at the bottom to then be released into the drainage system.
Manual grease traps are sold based on the flow of waste water they are capable of separating measured in litres per minute and not the holding capacity of the tank itself, for example a 16 L grease trap is capable of separating the waste water flowing into it at rate of 16 L per minute.
